DRUMSTICK AND BRINJAL SAMBHAR



           Ingredients:

1.       Thovaram paruppu - 1 handful
2.      Shallots - 10
3.      Garlic - 3-4
4.      Green chili - 1
5.      Tomato - 2
6.      Drumstick - 2
7.      Brinjal - 3
8.      Tamarind - 1 lemon size
9.      Asafoedita - 1 pinch
10.   Turmeric powder - 1/4tsp
11.    Sambhar powder - 1tsp

For Seasoning:

1.       Red chilies - 3
2.      Mustard - 1/4tsp
3.      Jeera - 1/4tsp
4.      Curry leaves - 1spring
5.      Coriander leaves for garnishing


Preparation:

  • Wash and soak (Dhal) thuvaram parupu for 15 mins and in pressure cook, add parupu, garlic, tomato, asafoedita ,turmeric powder, green chilly with 21/2 cups of water and leave it for 3 whistle.After the steam release, mash the dhal and keep it aside
  • In a pan heat oil, mustard seeds, jeera, red chillies, curry leaves and saute it for 20 secs. Now add onions fry it till onion become transparent.
  • Add the washed Drumstick and brinjal and fry it for 2 mins.
  • Meanwhile soak the tamarind in hot water for 10 mins and extract the tamarind juice and keep it aside.
  • Now add the cooked dhal with about 1/2 cup of water, salt, sambar powder and allow it to boil for 3 mins.
  • Now add tamarind extract allow it to boil for 5 mins. 
  • Garnish with coriander leaves and serve hot.
